Here's what I love about my go-to pizza dough. I can use it to make French bread or baguettes and so many other delicious breads. Yum-and-easy factor.

makes 2 French bread or 3 baguettes
1 Pizza dough
1/4 cup (2 oz) warm water
1 tsp baking soda
- Make the pizza dough as directed from The Endless Possibility of Pizza Dough recipe.
- Divide the dough into equal amount: 2 equal amount for French bread or 3 equal amount for baguettes.
- Roll each dough into a log, using the all-purpose flour to prevent the dough from sticking.
- Place a dough on to the Non-Stick Perforated French Bread Pan or the Non-Stick Perforated Baguette Pan. (If you don't have these pans, put the dough on a baking sheet lined with the parchment paper.)
- Cover the pan with a towel and let rise in a warm, draft-free place for 30 minutes.
- When the dough is ready to bake, preheat the oven to 400°F.
- Mix the warm water with the baking soda to make a wash.
- With a light stroke, brush the baking soda water over the dough.
- Score the dough with a knife if desire.
- Place the pan on the middle rack and bake until golden brown, about 20 minutes.
- Remove the pan from the oven.
- Before slicing the bread, wait for 5 to 10 minutes. Enjoy.
